Red Matta rice is one of the most common staples in a Kerala household. Indegenous to the region of Palakkad, this rice has a unique flavour, texture and abundance of health benefits. Rich & fertile black soil of Palakkad region  consists of about 75% clay which has high water retention capacity. This region is also naturally irrigated by the rivers of Western Ghats, making it ideal for cultivating Matta rice.

Unlike common variants Matta rice is coarse and the outer layer of grain is red in color, thus it is also popularly known as Red Matta, kerala red Rice, Palakkadan Red Rice, etc. Matta Rice is rich in fiber, has lower glycemic index and consists of essential minerals such as Calcium, Magnesium and also Vitamin A & Vitamin B. Regular consumption of this rice has proven to help reduce the risk of heart diseases, diabetes, etc. 

Apart from being healthy, Matta Rice has a unique flavour that compliments the Kerala style sambar and curries. It is also used to make Porridge which is a regular breakfast for the people in this region. Unpolished Matta rice is very rough & difficult to cook. However, polishing it enhances the flavour, aids digestion and makes it easier to cook.

Method of Cooking:

1. Rinse & then soak the rice for 30-45 mins

2. Add 2.5 measures of water 

3. Pressure cook it for 3 whistles and stir the cooker once it cools down - OR - Cook in an open vessel, stir intermittently. Check if done by squeezing a few grains and drain excess water after the rice is cooked.

Veg| Keep away from moisture and store in an airtight container. Best before 180 days from the date of packing.
