1. Mix lightly, 1 standard cup(250 ml) Nirapara's Chemba Puttu podi with ¼ cup(125 ml) water and salt to taste. The mixture should resemble bread crumbs. Set aside for 5 min.
  2. Ready the pressure cooker or the puttu steamer-bowl with water and bring the water to boil.
  3. Now check if the puttu mix is okay (when you pinch the dough, it should stick together).
  4. It is wet if there are too many big lumps. You need to rub in a little more puttu powder.
  5. It is dry if when you pinch the dough, it will not stick together. Add a splash of water( 1 tsp at a time) and lightly rub it in to get the right consistency.
  6. Pour a medium ladle of the prepared puttu mix into the puttu mould, top it with 2 tsp. grated coconut. Continue to layer. Close the lid. You should get 4 puttu pieces for one cup of puttu powder .
  7. Place the puttu mould on the pressure cooker spout or on the puttu steamer. Make 3 holes through the points provided in the lid ( puttu steamers usually come with a rod) .
  8. Steam for 12 to 15 min on medium flame. Remove and cool for a couple of min. Over turn onto a plate and using the rod push the puttu on to the plate.
Serving Suggestion

Serve hot with kadala(channa) curry or potato curry and bananas
