1. Make a mix of the Bagara baingan masala, the roasted masala, salt, turmeric and stuff the slit baingans/ brinjals. Leave some masala for the gravy
  2. Heat oil in a pan/kadai. Add mustard seeds, cumin seeds, methi seeds. When the seeds start to splutter, lower the flame and add the cut onions. Stir fry until the onions turn soft.
  3. Now add the stuffed baingans/ brinjals and sauté for 5 min on a low flame.
  4. Remove from the flame. Place the baingans and onions in a microwave usable dish.
  5. Add ½ cup water and the tamarind juice to the leftover masala and pour over the brinjals. Cook in the microwave for 10 min or until the brinjals are soft. While cooking turn the brinjals over once, after 5min
