Heat oil in a pan. Add the cumin and saunf seeds. When the seeds starts to splutter, lower the flame and add the green chilies and ginger. Stir fry for a few seconds
Now add the onions and cook for a couple of min and then add the cut capsicum, large green chili pieces and salt and stir fry on a low flame for a few min..
Next add the kasoori methi and aamchur and cook on low flame for another 5 mins or until the vegetables are cooked yet crisp and firm..
Lastly add the Joshi's Garam Masala and stir fry for a few seconds..
Remove from flame.
Serve hot with any Indian bread or toasted bread.
