1. Place a cooker/Pressure cooker on medium flame with an inch of water in it.
  2. Take 4 cups water and 1 tsp oil into the Khaman mix( 500gm)and gently mix the batter with a spoon.
  3. Grease the inside of 2 flat steel or aluminium dishes that will fit into the cooker. Pour the batter into these dishes. Place the same in the cooker. Close the lid. And steam for 20 min without the whistle.
  4. Remove from flame. Let the pans cool down for a few min. Add 60 ml water to each pan of cooked Dhokla.
  5. Over -turn the dishes on to a plate. Cut into squares or diamonds.
  6. Garnish with coconut gratings, Mustard and oil thadka, chopped coriander leaves, fine sev, hing and or fried green chilies.
Serving Suggestion

Serve hot with green coriander chutney.
